2 pounds skinless, boneless chicken breasts
1 packet taco seasoning mix
1 16 oz jar salsa (use your favorite; I like something chunky - like Tostito's)
1/3 cup chopped fresh cilantro
juice from two limes

Directions:
Directions:
1. Place chicken breasts in the bottom of your slow cooker. Sprinkle taco seasoning over the top, then cover with salsa, lime juice, and cilantro.

2. Place lid on top and cook for 4 hours on high, or 6-7 hours on low.

3. Remove chicken from crockpot to a separate bowl and shred with two forks. Place shredded chicken back in the crockpot with liquid. Keep crockpot on warm until ready to serve.

4. Serve with taco shells or tortillas, adding on your favorite toppings. I like to use shredded lettuce, diced tomatoes, diced avocado, cheese, and sour cream (or greek yogurt).

Note: this recipe creates a lot of liquid. You may want to drain some of the liquid off of the chicken as you place into the taco shells.

Very tasty and easy! It smells yummy, too! Tim even commented that these tacos were better than the chicken tinga he had at lunch time, and he's not one to exaggerate!
