Ingredients: Crust:
1 Cup butter, softened ½ Cup powdered sugar 2 Cups flour
Filling:
4 eggs 2 Cups granulated sugar ½ tsp. salt 6 Tbl. lemon juice 6 Tbl. flour ½ tsp. baking powder 1 tsp. lemon extract Zest of one lemon

Directions:Preheat oven to 350º. Use non-stick spray to grease 13x9" pan (preferably glass).
Make crust by creaming together the butter and powdered sugar until fluffy, then gradually add flour and spread into prepared pan. Make top as even as possible, especially at edges. Bake for 10 minutes.
Meanwhile, make filling by beating 4 eggs. Zest and juice lemon and add all other ingredients. If the mixture is very bubbly, allow to settle a bit before pouring over baked crust. Bake for 30 minutes or until top is very lightly golden and springs back when touched.
Allow to cool completely, cut into squares and sprinkle with more confectioner's sugar. |

Notes: The shortbread-like crust is one of the best parts of this favorite treat. I got the basic recipe from my church cookbook in high school, and have been tweaking it for years until I got to this result, which Kristy says has the perfect "goo factor".
