Chicken:
3 whole chicken breasts - cut in long slices for skewer
1 tsp coriander powder
1 tsp cumin
1 Tbsp soy
1 tsp salt
4 Tbsp vegetable oil
1 Tbsp curry powder
1 Tbsp ground tumeric
8 Tbsp coconut milk
3 Tbsp sugar (brown)

Satay Sauce:
1¾ can coconut milk
2 Tbsp red curry paste
¼ cup soy sauce
3 Tbsp sugar (brown)
1 cup unsalted peanut butter

Directions:
Directions:
Chicken: Mix all chicken ingredients together, adding chicken last. I usually marinate the chicken without the wooden skewers) for at least a day does fine in the freezer for several days if you are tight on time). Cook over BBQ grill or broil in oven (take care that skewers don't catch on fire).

Satay Sauce: Put all satay sauce ingredients in a pot and simmer 5-10 minutes (be sure clumps of red curry paste are dissolved).
