6 eggs
2 T. milk
1/4 tsp. pepper
1 T. canola oil
1 c. shredded cheese
3/4 c. diced fully cooked ham
4 tortillas (8in), warmed

Directions:
Directions:
Whisk eggs, milk, and pepper in skillet until eggs are set. Stir in cheese and ham. Spoon mixture in tortilla and roll up. Wrap in plastic wrap after cooled. May be frozen up to a month. Thaw in fridge overnight. Remove plastic wrap in a moist paper towel. Microwave on high 30-60 seconds.
