1 lemon
1 roastin chicken (size 15)
1 Tbsp of Vegemite
¼ cup of butter, softened

Directions:
Directions:
Combine Vegemite and butter in a small bowl. Place lemon inside cavity of chicken. Secure legs and wings with string or skewers and place on a rack in a roasting pan. Brush with the combined mixture of Vegemite and butter. Bake chicken in an oven at 200°C, allowing 25 minutes per 500gr (1 hour, 15 minutes). Baste chicken at least twice during cooking with remaining Vegemite mixture.

One of the biggest foodie questions that is asked of us Aussies, is “what is Vegemite?”. Our classic response is that it is scraped off the bottom of the beer barrels after fermentation! Really, it’s kind of beef extract spread that is great thinly spread on buttered toast (lots of vitamin B for the day after). Most unsuspecting visitors get a very thick layer spread on toast and find it most unpleasant.
