chicken pieces - 12 drumsticks, 12 thighs, or 6 breasts
6 cloves of garlic, minced
2 Tbsp oregano
coarse salt and fresh ground pepper, to taste
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 cup pitted prunes, halved
1/4 cup Spanish green olives, halved
2 Tbsp capers, with juice
2 bay leaves

1/2 cup brown sugar
1/2 cup white wine
2 Tbsp cilantro, finely chopped

In a large bowl, combine chicken pieces with garlic, oregano, pepper, salt, vinegar, olive oil, prunes. olives, capers and juice, and bay leaves. Cover and let marinate over night.

Preheat oven to 350

Arrange chicken in a single layer in a large shallow pan. Spoon marinade over top. Sprinkle with sugar and pour over the wine.

Bake for 50 minutes basting frequently. Remove from oven and sprinkle with cilantro. Serve over rice, passing the remaining pan juices in a gravy boat.
