1 1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 tsp salt
1 teaspoon cinnamon
3/4 cup sugar
1/2 cup vegetable oil
2 eggs
2 teaspoons vanilla
1 1/2 cup shredded squash
May add 1 cup blueberries, and/or 1 cup chopped nuts (pecans or walnuts)

Directions:

Sift together the flour, baking soda, baking powder, salt, cinnamon and sugar. Mix thoroughly and set aside. Combine eggs, sugar, oil and vanilla in a large bowl, and beat well. Stir in squash. Add the dry ingredients. Mix well. Stir until all ingredients are moist. Pour into greased 9x5x3 loaf pan. Bake at 350 degrees for 50 minutes. Let cool at least 10 minutes before taking out of the pan.
