2 cups avocado mayo
2 cups cream of celery
2 cups cream of chicken
2 cups shredded sharp cheddar cheese
1 Tbsp yellow curry
1 Tbsp lemon juice
1 dusting of zest of lemon
4 cooked chicken breasts (shredded)
2 heads of broccoli chopped into bite sized pieces

Directions:
Directions:
Combine mayo, cream of celery, cream of chicken, cheese, curry, lemon juice. Layer chicken and broccoli in 8x12 dish. Pour sauce over. Bake 350º for 35 minutes covered. Check frequently, look for bubbling. Uncover. Broil until top lightly brown. Let sit for 5-10 minutes, serve over rice.

My wife’s mother, Terri, passed this recipe along to us. The dish was a birthday favorite of hers growing up. When I first tried this dish early in our relationship, Kate, my wife, described the dish as a traditional Yugoslavian dish. As I do frequently, I checked the source to confirm it’s authenticity. Sure enough, the internet (which never lies) stated the dish was a popular recipe served by a chef in NYC in the earlier 20th Century. Nevertheless, the dish is amazingly good and now it’s an ongoing joke that this meal was from the motherland. We’ve been able to clean the ingredients up a bit and still maintain its classic, comfort food fit in our family. Eat clean! Love hard! Check your sources.
