2 - 3 Whole Cooked Beets
2 -3 Juicy Oranges (I use naval oranges with no seeds)
Red Onion, thinly sliced
Olive oil
Balsamic Vinegar
Salt and Pepper to taste

Directions:
Directions:
Slice the beets about ¼" thick. Place in a wide vs. deep bowl. Cut the peel off of 2 oranges, cut into supreme's and add to the bowl. Add thinly sliced red onion. Squeeze the juice from the third orange into the bowl. Salt and pepper to taste and then drizzle with olive oil. Let sit about 30 minutes or refrigerate until ready to serve.
