1 Fennel Bulb
4 -5 White Button Mushrooms
A piece of Parmesan Cheese or freshly shredded (not pre-grated)
Olive Oil
White Balsamic Vinegar

Directions:
Directions:
Using a mandolin, shave the fennel into thin slices. Do the same with the mushrooms. Using a serving platter with sides, do the following...layer the fennel and mushrooms, sprinkle with salt and pepper, drizzle olive oil and the vinegar over the top. Using a vegetable peeler, add shreds of Parmesan.. Repeat this layering until you are out of ingredients making sure the last layer is the cheese. Drizzle with a little more oil. Let sit at room temperature until serving (up to an about hour or place in the fridge until about a ½ before serving).

This is one of my dad's favorite salads. Really tasty and quite elegant
