2 cups mashed cooked sweet potatoes
1/2 cup butter, softened
2 eggs, separated
1 cup brown sugar
1/4 tsp. salt
1/2 tsp. ginger
1/2 tsp cinnamon
1/2 tsp. nutmeg
1/2 cup milk
1/4 cup sugar
1 unbaked 9 inch pie shell

Whipped cream for garnish

Directions:
Directions:
Combine sweet potatoes, butter, egg yolks, brown sugar and spices.
Mix well. Add milk, blending until smooth.
Beat egg whites until foamy gradually add 1/4 cup sugar, beating until stiff.
Fold into sweet potato mixture
Pour filling into pie shell, sprinkle with additional spices, if desired.
Bake at 400º for 10 minutes.
Reduce heat to 350º and bake for 30 minutes,
When cool, garnish with whipped cream.
