1 c. margarine
1 1/2 c. sugar
1 tsp. baking soda
1 3/4 c. flour
2 eggs
1/2 tsp. salt
3/4 c. buttermilk (or sour milk)
1 tsp. vanilla
2 ripe bananas (mashed)


Directions:

Cream shortening and sugar. Add remaining ingredients, mix well. Bake in greased cookie sheet at 375 degrees for 30 minutes. Frost with powdered sugar frosting. (I just use the recipe for powdered sugar that’s on the bag.)

Esther brought this recipe home from a Retreat when we used to have them at other churches; it’s always been a favorite. I always baked them in my dark cookie sheet that had sides, but I imagine you could bake them in a 9x13 cake pan – they’d be a little thicker.
