Banana Crumb Muffins Recipe

1 1/2 c. flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
3/4 c. sugar
3 large ripe bananas-mashed
1 egg, lightly beaten
1/3 c. melted butter (or margarine)

Streusel topping:
1/3 c. packed brown sugar
1 T flour
1/8 tsp. cinnamon
1 T cold butter (or margarine)

Combine flour, salt, baking powder, and baking soda in mixing bowl. In separate bowl, mix together bananas, sugar, egg and butter. Add banana mixture to dry ingredients. Fill paper-lined muffin cups 3/4 full. Mix together streusel topping ingredients and sprinkle over muffins. Bake at 375 for 18-20 minutes. Cool on rack 10 minutes in pan before removing.
