3 c. flour
1¼ c. shortening
½ tsp. salt
1 egg, beaten
¼ c. ice water
1 T. vinegar

Cut together the flour, shortening, salt. Drizzle and cut into the flour mixture the beaten egg, ice water, and vinegar.
Roll it out.... Mom didn’t have any directions regarding the rolling out of the dough, so you’re on your own here!
For a single crust, bake at 400º for 11-12 minutes

For 2 pie shells (double crusted pie) :
4½c. flour
1¾ c. plus 2 T. shortening
1½ tsp. salt
¼ c. plus 2 T. ice water
1 large egg
1½ T. vinegar

For a filled pie (i.e. apple), bake at 425º for 10 minutes, then turn oven down to 350º for 40 or 50 minutes.
Before placing in oven mix 1 egg yolk with 2 T. milk and brush on top crust. Then lightly sprinkle with sugar.

Mom’s pie crusts were flaky and delicious. If you can believe it, she didn’t like crust. She only ate the filling of pies (even her own)!
