4 skinned chicken breasts, halved (about 2 lbs)
1/2 cup all purpose flour
1/4 tsp. salt
1/8 tsp. black pepper
2 Tbsp. butter or corn oil
3/4 tsp. garlic powder
1 tsp. onion powder
1 can (11 oz) apricot nectar
6 Tbsp. concentrated orange breakfast drink
2 Tbsp. powdered ginger
1/4 cup brandy or ginger brandy, if available

Dip chicken in flour blended with salt and pepper. Brown slowly in butter or oil over medium heat in large iron or electric skillet. In small bowl, blend garlic and onion powders, apricot nectar, concentrated orange drink, and powdered ginger (if using plain brandy, increase powdered ginger to 3 tsp.. Pour over chicken. Add brandy. Simmer slowly, covered, until chicken is tender. Add a little water, if needed while cooking. Serves 4.
