1 cup plain bread crumbs
1/4 cup corn starch ( mix with ciconut and bread crumbs)
1 cup coconut
1/2 cup pina colada mix
1 tbls powdered sugar
3 tbls Captain Morgan spiced rum
1/2 cup corn starch
Veg oil for deep frying
Chicken pieces

1 cup Pina Colada mix
1/4 cup water
2 tbls crushed pineapple ( drained)
1 tbls plus 1 tsp coconut
3 tbls plus 1 tsp powdered sugar
1 1/2 tsp corn starch
3 tbls cold water

Directions:

Mix bread crumbs cornstarch, and coconut in bowl and set aside

Combine pina colada mix, powdered sugar and rum in a bowl and set aside

Place 1/2 cup corn starch in a seperate bowl.

Hear oil for deep fat frying to 375°

Coat chicken in corn starch then into pina colada mix, then bread crumbs and coconut mix. Second coating back into pina colada, then bread crumbs again.

Place in hot oil and fry until golden

Dipping sauce

Mix pina colada mix, water, pineapple, coconut, and powdered sugar in a sauce pan. Heat on medium low until sauce begans to simmer, stirring frequently.

Let simmer slowly 10-12 min.

Mix corn starch and water together, add to sauce and blend well, let mixture simmer for 3-5 min. Remove from heat and bring to room temp
