To be made with leftover mashed potatoes.
1 1/2 c. mashed potatoes
1 egg
1 T flour
1/4 tsp baking powder
salt & pepper to taste (don't skimp)
Directions:
Directions:
Whisk the eggs, flour, baking powder, salt & pepper until smooth. Stir into the potatoes until combined.
In a large skillet, heat a couple tablespoons of butter over medium heat. Scoop the mixture into the skillet in mounds, about 1/4 cup or so each, do not crowd them. Flatten slightly with back of spatula.
Cook a few minutes on each side until the outside is brown and crispy
Place cooked patties on a plate lined with paper towel to blot off the excess oils. Repeat with the remaining potato mixture. Add butter to the skillet as needed.

I have fond memories of Dad making potato pancakes when we were kids. Of course he never used a recipe and this is as close as I could find to what he told me he used to do...except he says he added milk so if your mixture seems too dry, throw in a splash! You can add minced onion, cheese, chopped bacon or crumbled sausage,etc, to the mixture for added flavor before you fry it if you like.
