Canadian Health Check Recipe

2 teaspoons fresh lemon zest
1/4 cup lemon juice
1/3 cup extra virgin olive oil
2 large garlic cloves, minced
1 pint cherry tomatoes, halved
3 teaspoons basil, julienned
Salt and pepper to taste
1 lb long pasta of your choice
1/4 cup grated Parmesan

1. Combine lemon zest, lemon juice, olive oil, garlic and cherry tomatoes.

2. Cook the pasta and save 1/4 cup of the water used to cook it.

3. Toss drained pasta with mixture from step 1 and reserved water.

4. Add basil and salt and pepper.

5. Add Parmesan when pasta is still warm but not so hot that it totally melts cheese.

This recipe is really called Pasta With Lemon Olive Oil, but the quote on it’s page says “This is a Canadian Health Check recipe that’s seriously yummy and totally simple too!” We have no idea what Canadian Health Check is but the name stuck.
