1 pound ground beef
1/4 c. chopped onion
salt & pepper to taste
1 large bag Tater Tots
1 can Cream of Chicken or Mushroom Soup
1 can Vegetable Beef Soup
3 oz water
1 small bag frozen mixed vegetables (optional)
onion powder
salt or seasoned salt

Brown and crumble 1 pound ground beef with the onion. Season with salt and pepper. Microwave mixed vegetables for 3 minutes. Mix beef and vegetables with soups and water. Arrange Tater Tots closely in the bottom of a 9 x 3 baking dish. Sprinkle with onion powder. Cover Tater Tots with hamburger mixture and spread out into an even layer. Arrange another layer of Tater Tots to cover the entire surface and sprinkle with onion powder and salt.

Bake @ 375º for 45 minutes or until hot in center.

This is a variation on the recipe I grew up with. Just wanted to avoid cooking another vegetable on the side. I like the beefier flavor from the Vegetable Beef soup.
