Chicken and Black Bean Salad Recipe

1/3 cup olive oil
2 tbsp lime juice
2 tbsp chopped fresh cilantro
1 1/2 tsp sugar (I use stevia)
1 garlic clove minced
1/2 tsp chilli powder
1/2 tsp salt
1/4 tsp pepper

1 can 15 oz. black beans, rinsed and drained
1 can 11 oz mexicorn drained
1 med sweet red pepper, julienned
1/3 cup sliced green onion
6 cups torn romaine lettuce
1 1/2 cups cooked chicken strips

in a jar combine the first 8 ingredients, shake well and set aside. In a bowl toss beans, corn, pepper, and onions. Arrange romaine on a place top with bean mixture an chicken. Drizzle with dressing. Yield 6 service.
