1 lb grd beef
1 15oz can black beans, rinsed, drained
1 14½oz can Rotel
1 10oz can enchilada sauce
1 tsp grd cumin
4 tbsp chopped fresh cilantro or parsley
1 ½ c biscuit/baking mix
1 ½ c shredded Colby-Jack cheese
4 bacon strips, cooked, crumbled
⅔ c milk
1 lg egg, lightly beaten
sour cream, opt

Directions:
Directions:
Preheat to 400º
If baking in a skillet, 10" ovenproof.
Cook beef, drain.
Stir in beans, tomatoes, sauce, & cumin; boil.
Reduce heat; simmer, uncovered, 20 min.
Stir in 2 tbsp cilantro.

In a bowl, combine baking mix,½c cheese, bacon, cilantro.
Add milk & beaten egg.
Stir to form soft dough.
Spoon over beef mixture.

Bake, uncovered, til brown, 13-15 min.
Sprinkle with cheese; bake to melt.
Let stand 10 min.
Serve with sour cream.
