1½ lbs ground turkey
½ tsp salt
1 bay leaf
½ cup chopped onion
3 cloves crushed garlic
1½ cups diced tomatoes
1½ cups tomato sauce
¾ cup water or broth
½ tsp cumin
¼ tsp chili powder
¼ tsp paprika
1½ cups finely chopped kale
1 medium sweet potato, peeled & diced
fresh cilantro

In large skillet, brown turkey over medium- high heat and season with salt & cumin. When meat is browned and cooked through add onion and garlic. Cook over medium heat for 3 minutes. Add the diced tomatoes, sweet potato, tomato sauce, water, chili powder, paprika, salt, and bay leaf. Cover and simmer over medium-low heat until potatoes are soft and cooked (about 20 minutes). Add ¼ cup more water if needed. Add in chopped kale, stir until kale is wilted. Remove bay leaf. Add cilantro.

Or precook ground turkey and throw all ingredients in a crockpot!

One of our family’s favorites for Fall and Winter. Easy & healthy and can cook in a crock pot or quick pot. We’ve also added spinach or collard greens. You can increase spices to your preferred taste.
