8 medium russet potatoes, peeled and chopped
4 c. chicken broth
¾ c. chopped onion
½ tsp. pepper
1 tsp. garlic
3 c. sharp cheddar cheese (shredded)
1 (12 oz.) can evaporated milk
1 (5 oz.) can evaporated milk

Directions:
Directions:
In a 5- to 6-quart crockpot, combine potatoes, chicken broth, onion, pepper, and garlic. Cover, cook on low for 9-11 hours or on high for 4-4 ½ hours.

Stir two cups cheese and both cans of milk into soup. Cover and cook on low for an additional hour or on high for 30 minutes.

Use an immersion blender or hand potato masher to mash potatoes to preferred consistency and thickness of the soup.

Makes 9-12 side dishes or 6 hearty bowls.

When serving, top with remaining cheese and anything else you can think of that tastes great on a baked potato.
