8 medium russet potatoes, peeled and chopped
4 C. chicken broth
3/4 C. chopped onion
1/2 tsp pepper
1 tsp garlic
3 C. sharp cheddar cheese (shredded)
1 12 oz can evaporated milk
1 5 oz can evaporated milk

Directions:
Directions:
In a 5-6 qt Crockpot, combine potatoes, chicken broth, onion, pepper, and garlic. Cover, cook on LOW for 9-11 hours or on HIGH for 4-4 1/2 hours.

Stir 2 C. cheese and both cans of milk into soup. Cover and cook on LOW for an additional 1 hour or on HIGH for 30 minutes.

Use an immersion blender or hand potato masher to mash potatoes to preferred consistency and thickness of the soup.

Makes 9-12 side dishes or 6 hearty bowls.

When serving, top with remaining cheese and anything else you can think of that tastes great on a baked potato.
