1 1/2 c chopped tomatoes
1/4 c chopped cucumbers
1/4 c yellow peppers
1/8 c thinly sliced red onion
1 T parsley
2 T olive oil
1 t lemon juice
4 slices crusty bread
Salt & pepper

Directions:

Combine veggies
Drizzle with olive oil
Marinate 10 minutes
Brush bread lightly with oil
Season with salt & pepper
Grill bread
Spread thick layer of Boursin Garlic & herb cheese on toast
Top with tomato mixture
