Crust:
1 c flour
1/2 c butter
1/4 c sugar
1/2 c finely chopped nuts (Mom used walnuts, later omitting them when Ben developed allergies)

Filling:
1 c sugar
2 egg whites
2 tsp lemon juice
1 pkg partially frozen strawberries (I remember them packaged in a squarish container and you used a bottle opener to pry up the lid - maybe 10-12 oz)
1 c whipping cream, whipped

Directions:
Directions:
Crust: Mix together ingredients and spread on cookie sheet. Toast @ 350º until golden brown. Spread 1/2 crumb mixture on bottom of 9 x 13 cake pan. Reserve remainder.

Filling: Put sugar, egg whites, lemon juice and strawberries all together in large bowl. Blend together a low speed then turn on high for 15 minutes (seems like a long time!) until filling really whips up. Fold in 1 cup whipping cream, whipped.

Layer filling on crumb mixture. Put remaining crumbs on top. Freeze until ready to serve. Decorate with strawberry slices if desired.

This is a Helen Westby recipe. I don't think this was in the last cookbook, which all of my kids treasure. Mom served this often for circle or her bridge group. She tended to omit details so I guessed on the oven temp.
