1 lb. elbow macaroni
¼ c. butter
2 tbsp. flour
1 tsp. dred mustard
1 tbsp. pepper
2 c. milk
½ lb. sharp cheddar cheese, grated
½ lb. Velveeta cheese, cubed
½ cup gruyere, grated
salt and pepper to taste

Directions:
Cook pasta according to directions, returning cooked pasta to pot. Set aside. In medium saucepan, melt butter over medium heat. Stir in flour and mustard to form a smooth paste. Stir in milk and bring to a boil, stirring to prevent lumps. When the sauce thickens, stir in the all cheeses until melted, carefully watching to avoid burning. Reduce heat and stir occasionally. Season to taste with salt and pepper. Combine cheese sauce and pasta in the warm pasta pot, serving warm.

Add toppers like fresh cheese, lobster, bacon to taste. This recipe can be made with gluten-free noodles and gluten-free flour.
