Crumb mix:
cup margarine
1 cups flour
tsp. salt
1 cups brown sugar
2 cups shredded coconut

Middle layer:
1 tbsp. margarine
1 cups crushed pineapple with juice
1 tbsp. lemon juice
1 cup white sugar
4 tbsps. cornstarch

Directions:
Directions:
Mix together crumb mix ingredients till crumbly. Press about ⅔ of the mixture into 9" x 13" pan. Mix together white sugar and cornstarch. In a saucepan mix margarine, pineapple with juice, lemon juice and sugar mixed with cornstarch. Stirring constantly, bring to a boil over medium heat. Cool slightly. Spread over bottom layer, then cover with remaining crumbs. Press down slightly. Bake 350F oven for 25 minutes or until golden brown.
