1 egg yolk
1 cup sour cream
½ cup milk
3 tbsp. butter, melted
1 cup flour
2 tsps. sugar
1 tsp. baking powder
½ tsp. salt
¼ tsp. baking soda
1 egg white, stiffly beaten

Directions:
Directions:
Preheat waffle maker. Combine all ingredients, except egg white in a bowl and beat on low until moistened. Increase to medium, mix until smooth, do not overmix. By hand, gently fold in beaten egg white (this will create a lighter and crispier waffle). Pour ½ cup of batter over grids and close. Bake until steam no longer escapes, about 3-5 minutes. Serve hot. Freezing waffles: Bake waffles as directed. Cool on wire rack and wrap in moisture proof paper or plastic. Quickly reheat in your toaster oven, broiler or microwave oven.
