Cheddar Mashed Potato and Ham Bake Recipe

2 T butter
1 C celery
1 C onion
3 C ham
1 can cream of celery soup
1/2 C milk
Salt & Pepper to taste
5 C leftover mashed potatoes
2 eggs
1/2 C milk
1/2 C chopped green onion
1.5 C shredded cheese

Directions:
Directions:
Butter casserole dish. Chop celery and onion and fry in butter until tender.
Add ham and cook until light brown. Add soup, milk and salt/pepper.
Warm potatoes and whip in eggs and milk. Add green onion.
Take 1/3 C cheese and reserve. Add rest to potatoes
Spoon ham mixture into casserole and top with potatoes. Top with reserved cheese.
Sprinkle with pepper.

Cook at 350 degrees for 50 minutes.
