1 box yellow cake mix
1 C orange juice
1/2 C Vegetable oil
3 eggs
1 t orange zest
15 oz. mandarin oranges
1 large package of vanilla instant pudding
2 C flaked coconut, divided
1 frozen whipped topping, thawed

Directions:
Directions:
Preheat 350 degrees. Spray 2 9 inch cake pans (or a bundt pan)
Mix first 5 ingredients. Pour into pans.
Bake according to package directions.
Cool

In bowl, crush mandarin oranges with their juices. Leave a few for decoration.

Add pudding, 1 C coconut and then topping.

Mix

Frost and then sprinkle with coconut.

Chill if fridge for at least 2 hours or overnight.
