12 oz Dried Californian Apricots
2 3/4 C Water
2/3 C Sugar
3 T Cornstarch or Tapioca Starch
1/4 tsp Nutmeg
1 T Butter or Margarine

Directions:
Directions:
In a saucepan, combine apritos and water. Bring to a boil. Reduce heat and let simmer 20 mins. Remove from heat; cool. Prepare bottom crust in 9 inch pie plate, Drain cooled apricots, reserving 3/4 C liquid. Arrange apricots in the pie shell.
Combine sugar, starch, nutmeg and reserved apricot liquid; mix well. Pour over apricots. Dot with butter or margarine. Top with lattice crust or turn a frozen pie crust (thawed for 5 mins) upside down over the apricot pie. Bake 400º for 50 minutes or until crust is golden brown and filling is bubbly.
