Bread Stuffing (Best Ever) Recipe

8 cups white bread, cut into " cubes
cup butter or margarine
2 cups onions, chopped
2 cups celery, chopped
cups carrots, chopped
2 tbsp. chopped fresh or 2 tsp. dried sage
1 tsps. chopped fresh or tsp. dried thyme
1 egg
1 cups chicken broth
cup fresh parsley, chopped
1 tsp. salt
tsp. pepper

Preheat oven to 350F. Arrange bread cubes in single layer over 2 baking sheets. Bake turning occasionally until lightly toasted, about 10 minutes, set aside. Meanwhile in skillet, melt butter over medium heat. Add onions, celery, carrots, sage and thyme. Cook until vegetables soften, about 10 minutes. Remove from heat, cool slightly. In large bowl, lightly beat egg, stir in broth, parsley, salt, pepper, onion mixture and reserved bread cubes. Fill turkey body and neck cavities with stuffing. Roast until turkey is cooked.
