8 cups white bread, cut into ¾" cubes
¼ cup butter or margarine
2 cups onions, chopped
1 cup celery, chopped
¾ cups carrots, chopped
2 tbsp. chopped fresh or 2 tsp. dried sage
1½ tsps. chopped fresh or ½ tsp. dried thyme
1 egg
1¾ cups chicken broth
½ cup fresh parsley, chopped
1 tsp. salt
½ tsp. pepper

Preheat oven to 350ºF. Arrange bread cubes in single layer over 2 baking sheets. Bake turning occasionally until lightly toasted, about 10 minutes, set aside. In skillet, melt butter over medium heat. Add onions, celery, carrots, sage and thyme. Cook until vegetables soften, about 10 minutes. Remove from heat, cool slightly. In large bowl, lightly beat egg, stir in broth, parsley, salt, pepper, onion mixture and reserved bread cubes. Fill turkey body and neck cavities with stuffing. Roast until turkey is cooked.
