4 large baking potatoes, cut in wedges
2 tbsp. unsalted butter
1 tbsp. vegetable oil
1-2 cloves garlic, crushed
1 tsp. paprika
⅛ tsp. salt
¼ tsp. fresh ground pepper

Directions:
Preheat oven to 450ºF. Line a large rimmed baking sheet with foil. Scrub potatoes well then cut each lengthwise into 8 wedges, dropping the wedges into a bowl of cold water as you work and let stand 15 minutes. Drain potatoes well and pat dry. Melt butter on foil lined pan in oven for 1 minute, watching carefully in case it browns. Stir oil, garlic and paprika into melted butter. Add potatoes to butter mixture, turning to coat well. Spread potatoes on pan, then bake for 15 minutes. Turn wedges over and bake for 10-15 minutes more, or until golden and crisp. Sprinkle with salt.
