4 large baking potatoes
2 tbsp. unsalted butter
1 tbsp. vegetable oil
1 clove garlic, crushed
1 tsp. paprika
salt to taste

Preheat oven to 450F. Line a jelly roll pan or large rimmed baking sheet with foil. Scrub potatoes well then cut each lengthwise into 8 wedges, dropping the wedges into a bowl of cold water as you work. Melt butter on foil lined pan in oven for 1 minute, watching carefully in case it browns. Stir oil, garlic and paprika into melted butter. Drain the potatoes well and pat dry. Add potatoes to butter mixture, turning to coat well. Spread potatoes on pan, then bake for 15 minutes. Turn wedges over and bake for 10-15 minutes more, or until golden and crisp. Sprinkle with salt.
