1/2 c. butter
1 c. brown sugar
1 egg
3/4 c. mashed banana
1 tsp. vanilla
1 c. all purpose flour
1 tsp. salt
1/2 tsp. baking soda
3 c. rolled oats
1/2 c. raisins or dates - optional

Directions:
Directions:
Preheat oven to 375º F.
Cream butter, sugar & egg in large bowl. Beat in mashed banana & vanilla. In separate bowl mix flour, salt & baking soda. Add to creamed mixture; mix well. Add oats & raisins. Drop by rounded teaspoons onto greased baking sheets. Bake for 15 minutes or until lightly browned. Makes 60 cookies.

"These cookies are easy to make & make a tasty change from banana loaf. Freeze cookies in snack packages of 2 & put in your lunch box frozen. They will defrost by the time you want to eat them...& be fresh. Add chocolate chips to the recipe for a treat."

This recipe was given to me by Sandy Solski at the Hospice Centre in Kelowna. She had brought these cookies to the Centre to share with the grieving families there when my dad, Archie Bredin, was passing away in March 2009 from cancer.
