Ingredients:  
1 tsp. olive oil
1 c. diced onion - brown in olive oil before adding to soup
1 tsp. garlic powder
1 box cooked macaroni noodles
3 c. tomato juice - low sodium
1 c. water
1 lb. lean ground beef, cooked
1 tbsp. beef base
½ c. parsley, chopped
½ c. white wine
2 tbsp. Worchestershire sauce
1 can diced tomatoes
grated parmesan, for serving

Directions:
Directions:
In a large pot combine tomato juice, water, wine, beef base, parsley, onion, Worcestershire and tomatoes. Bring to a boil. Reduce heat and simmer for 30 minutes. Add in meat and noodles and simmer another 15 minutes.

Add more juice or water, as needed

Serve with parmesan cheese!

Beef base can be found in a jar in most grocery stores. The brand I use is called Better Than Bouillon.
