4 egg whites, room temperature
pinch salt
2 tsp. sugar
4 egg yolks
cup icing sugar
1 tsp. vanilla
cup cake & pastry flour
cup flour

Directions:
Directions:
Beat egg whites, salt and 2 tsp. sugar together until medium peaks form. In a separate bowl blend together 4 egg yolks and cup icing sugar. Add vanilla and fold in pastry flour into mixture. Whisk in cup flour and fold in remaining egg whites until fully incorporated. Line bottom of jelly roll pan with parchment paper. Spread evenly in pan and bake 12 minutes. Let cool slightly and loosen sides of jelly roll pan. Sprinkle with icing sugar. Take clean tea towel and turn jelly roll out of pan and sprinkle with icing sugar and roll with tea towel. Once cool gently unroll and spread ⅔ cup jam over entire cake and re-roll
