10 Oz Shrimp
¾ Lb Fresh Gnocchi
6 Oz Cherry Tomatoes (if you can find "sugar bombs" use these as they are awesome)
2 Garlic Cloves
2 Scallions
1 Ear Corn (shucked)
1 Bunch Sweet Basil
2 Tbsp Butter
¼ Tsp Crushed Red Pepper Flakes (Optional)

In a large pan, heat 2 tsp of olive oil on medium-high until hot. Add the tomatoes. Cook without stirring for 3-4 minutes or until browned and blistered. Season with s&p. Continue cooking for 1 minute then transfer to bowl and wipe pan. In same pan add 2 tsp olive oil on medium-high until hot, add the scallions and shucked corn; cook stirring occasionally 1-2 minutes or until slightly softened. Turn off the heat; season with s&p. Pat the shrimp dry and season with s&p. Add the shrimp to the pan of corn, garlic and pepper flakes (optional). Cook on medium high stirring frequently 3-4 minutes or until the shrimp are opaque and cooked through,

While the shrimp cook, add the gnocchi to the pot of boiling water. Cook 2-3 minutes or ntil the gnocchi float to the top of the pot. Reserve ⅓ cup of gnocchi cooking water. Drain the gnocchi and add to the pan of shrimp and corn. Add the blistered tomatoes, butter, half of the reserved gnocchi cooking water and half the basil (tear just before adding). Cook on medium-high sstiffing vigorously 1-2 minutes or until the gnocchi are coated. If they seem dry, add more of the reserved water. Season with s&p to taste. Garnish plates with rest of basil and ENJOY!
