½ c. shortening
1 c. brown sugar
1 c. applesauce
1 c. raisins
1 c. chopped pecans
¼ c. cake flour
2 c. cake flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. ground cloves
½ tsp. salt
¼ tsp. nutmeg
½ tsp. cinnamon


Directions:
Directions:
In a large bowl, cream together shortening and sugar. Add applesauce, raisins (chopped), pecans and ¼ cup of the flour, sifted. In a separate bowl, sift together all the dry ingredients. Add these to the creamed mixture and stir until well mixed. Pour batter into a greased and floured tube pan. Bake at 350 degrees for about 1 hour. Test center of cake with a toothpick; if it’s still mushy, bake a little longer or until center tests done. Note: applesauce cakes may collapse or fall apart if you take them from the pan too soon. Let cake cool completely in the pan.
