1 ⅔ Cup Sugar
⅓ Cup all purpose flour
½ Tsp "FRESH" grated orange zest
4 Cup Rhubarb (cubed) fresh or frozen
3 Cup Strawberry quartered fresh or frozen
3 Tbsp Butter
2 9" Pastry for top and bottom of pie
1 Egg (for egg wash)

PREHEAT OVEN 425º
Prepare Pastry: Mix the sugar, a/p flour and orange peel together. Separate into two equal parts. Take one part and mix into the fruit, make sure they are completely coated all over. Take second part and sprinkle half of that mixture into the bottom of the pastry, pour fruit into pie shell and sprinkle the top with the remaining flour mixture. Dot the fruit with the butter. Now take the second pastry and either cover the pie completely making small slits on top for vapor to escape or make strips for a lattice effect. Once completed make an egg wash and cover all the pastry then sprinkle with sugar.

When ready to bake, cover the edges of the pie so they don't burn. Remove cover last 15 minutes of baking.

Bake pie for 50-60 minutes until it begins to bubble. Let sit for 3-4 hrs before consuming.

My husband is Canadian and he LOVES this pie. Had a schoolmate who's husband was craving rhubarb. Made a pie for her hubby and he raved that it tasted just like his grandma's!
