1 lb. butter
2 c. sugar
6 eggs
4 c. flour
1-1/4 oz. lemon extract
1 qt. pecans
½ lb. candied cherries
½ lb. candied pineapples


Directions:
Directions:
Cream butter and sugar. Add egg yolks, 1 at a time, beating well after each addition. Add lemon extract and 3 cups flour. Combine fruit and pecans and dredge with last cup of flour. Add to mixture. Beat egg whites until stiff but not dry and fold into mixture. Have oven heated to 325 degrees and bake for 30 minutes. Turn oven down to 300 degrees and continue to bake 1 hour or until done.
