2 c. sugar
1 c. cooking oil
4 eggs
2 c. self-rising flour
2 tsp. cinnamon
½ tsp. nutmeg
1 can pumpkin or 2 c. fresh, cooked pumpkin
¾ c. seedless raisins
1 c. nuts
¼ c. cooking oil
¼ c. self-rising flour


Directions:
Directions:
Cream sugar and cooking oil until smooth. Add eggs, 1 at a time, mixing well after each addition. Sift flour with spices 3 times. Add to creamed mixture and mix until smooth. Add pumpkin and mix thoroughly. Mix the raisins and nuts with the ¼ cup cooking oil and the ¼ cup flour. Add to cake batter. Pour into 2 greased and floured 9 inch layer cake pans. Bake at 325 degrees for 3-35 minutes or until done.

Icing for pumpkin cake:
1-1/2 stick margarine
1 c. milk
1-1/2 tsp. vanilla
1-1/2 c. brown sugar
1-1/2 c. white sugar
1 c. pecans, chopped

Melt margarine, add milk and vanilla, sugar and pecans. Cook until thick. Cool before putting on cake.
