1-1/2 c. oil (Crisco)
2 c. sugar
4 eggs
2 c. flour
2 tsp. soda
2 tsp. cinnamon
½ tsp. salt
3 c. grated carrots


Directions:
Directions:
Blend oil and sugar. Beat in eggs, 1 at a time. Sift dry ingredients, mix in carrots. Blend well. Pour into greased cake pans, floured. Bake at 350 degrees for 18-25 minutes. Cool. Makes 3 layers. Cover with frosting below.

Frosting:
1 stick oleo
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
2 tsp. vanilla
1 c. nuts

Cream oleo, cream cheese and sugar until smooth. Add vanilla and nuts. Spread on cake.
