equal amounts of fresh string beans and potatoes
diced salt pork
¼ c. vinegar (I use tarragon vinegar.)

Directions:
Directions:
Cook string beans and potatoes until tender. Meanwhile, fry diced salt pork until brown. Drain vegetables and pour hot salt pork plus the fat onto the hot vegetables. Deglaze the frying pan with the vinegar and pour over vegetables. Let stand covered a minute or so before serving. I cook the vegetables in a pressure cooker for 2½ minutes while I saute the salt pork. Add seasonings if you wish.
