Lemon Thyme Chicken with Sweet Gnocchi Recipe

Ingredients: 4 T. flour 1/2 tsp. coarse salt freshly ground black pepper 1/2 tsp. poultry seasoning 1 1/2 lb. boneless, skinless chicken breasts 3 T. extra virgin olive oil 2 T. butter 1 medium onion, chopped 1 c. chicken broth juice of 2 lemons 6-8 sprigs fresh thyme leaves stripped from stem and chopped Sweet Gnocchi: 1 lb. fresh potato gnocchi 2 T. butter 1/2 tsp. ground cinnamon 2 T. sugar grated parmesan cheese

Directions:Put a pot of water on to boil for the gnocchi. Mix the flour, salt, pepper and poultry seasoning in a large bag for bowl. Add the chicken breasts and toss to coat. Save the extra flour. Heat the oil in a large frying pan over high heat, add the chicken and cook about 5 minutes per side. Remove the chicken and add 1 T. of butter and the onion to the pan. Cook for 2-3 minutes stirring frequently. Add the reserved flour stirring well and cook for 1 minute. Add the chicken broth and bring to a boil. Reduce the heat and add the juice of 2 lemons. Add the thyme and 1 T. of butter. Add the chicken back into the pan and let simmer. When the gnocchi is done, toss with a little butter. Mix the cinnamon and sugar. Sprinkle the sugar mixture over the gnocchi and toss. Top with parmesan cheese and serve with the chicken. |
