3 c. heavy or whipping cream
6 egg yolks
⅓ c. sugar
1 t. vanilla
⅓ c. packed brown sugar

sliced strawberries, pineapples, bananas, mandarin orange sections

Directions:
Directions:
Early in the day or day before in medium saucepan over medium heat whipping cream until tiny bubbles form around edge (don't boil).

In heavy large saucepan with wire whisk beat yolks with sugar until well blended, slowly stir in cream. Cook over medium low heat, stirring constantly until mixture just coat back of spoon (about 15 minutes). Stir in vanilla, pour into 1½ quart souffle dish or casserole, refrigerate until well chilled (4+ hours).

Before serving preheat broiler. Carefully sift brown sugar over top of chilled mixture. Broil 3-4 minutes until sugar melts making a shiny crest, chill.

Top with sliced fruit.
