5 Skinless, boneless chicken breast halves
2 Eggs
1 Cup Panko bread crumbs
2 Tablespoon all-purpose flour
1 Cup of olive oil or canola oil for frying
½ Cup of tomato sauce
¼ Cup of mozzarella cheese shredded
¼ Cup of grated provolone cheese
½ Cup grated parmesan cheese
¼ Chopped fresh basil
¼ Teaspoon Italian seasoning
¼ Teaspoon oregano
Salt and Pepper

Preheat oven to 375ºF. Place chicken breast between two sheets of plastic on a solid surface and firmly beat the chicken with a meat mallet until the thickness is about ½ -inch. Season chicken thoroughly with ¼ teaspoon of garlic powder, ¼ Italian seasoning, ¼ oregano, and salt and pepper to taste. Beat eggs in a medium bowl and set aside. Mix bread crumbs and a ½ cup of parmesan cheese in a separate bowl, set aside. Place flour in a sifter or strainer, sprinkle over chicken breast, evenly coating both sides. Dip flour-coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides, set aside breaded chicken breast for about 10 minutes. Heat 1 Cup olive oil or canola oil in a large skillet on medium heat until it begins to simmer. Cook chicken breast on both sides until it is golden brown for about 5 minutes. Place chicken on a baking sheet and on the top of each breast, add some tomato sauce. Sprinkle each chicken breast equally with mozzarella and provolone cheese. Sprinkle parmesan cheese on the top and then drizzle with olive oil. Bake in the preheated oven for about 20 minutes or until cheese is brown and bubbling and chicken breast is not pink on the inside.
