1 cup graham cracker crumbs
2 tbsp. sugar
¼ cup butter, melted
4 pkgs. cream cheese, softened
1¼ cups sugar
3 tbsp. cornstarch
2 tsp. vanilla
1 tbsp. lemon zest, grated
3 eggs
1 egg yolk
¾ cup sour cream
¾ cup sour cream
2 tbsp. sugar
2 tsp. lemon juice

Blend well graham crumbs, 2 tbsp. sugar and ¼ cup melted butter and press in bottom of spring form pan. Bake in 350ºF oven for 10 minutes. Mix cream cheese with 1¼ cups sugar a little at a time. Add cornstarch, vanilla, lemon zest, eggs and egg yolk and beat on low speed until blended. Add sour cream and beat on low speed. Pour filling on cooled crust. Bake 10 minutes in 400ºF oven and then turn down oven to 225ºF and cook for 20 minutes. Turn oven off and leave in oven for 1 hour. After a half hour open oven door slightly. Mix together ¾ cup sour cream, sugar and lemon juice and spread over cheesecake.
