3 tbsp. butter (plus a little extra for buttering your dish)
2 tbsp. flour
1½ tsp. salt
¼ tsp. pepper
3 c. milk
5-6 good-sized red potatoes

Directions:
Preheat oven to 275º or 325º, see below.
In a large skillet, melt butter. Remove from heat and stir in flour. Add salt and pepper. Add milk, slowly while constantly stirring. Put on high heat and stir until it becomes slightly thickened like a white sauce. Peel and slice red potatoes. Put them into the white sauce and heat until bubbly hot (stir, so it won't burn on the bottom). Place in a buttered casserole dish. Dot top with butter before placing it into the oven. Bake, uncovered for 3 hrs at 275º or 2½ hrs at 325º.

I usually bake this at 350º until I see it bubbling, and then I turn it down to 325º for 2½ hours. Bake it until it's nicely browned on top and don't forget to really butter your baking dish or it will burn and stick on the bottom.
