16 oz. bag of peas
3 qt. water
1 small ham bone/shank
1 large onion, cut into chunks
2 large chicken bouillon cubes or 2 tbsp. bouillon powder
½ tsp. garlic powder
½ tsp. oregano leaves
½ tsp. pepper
1 bay leaf
1½ c. carrots sliced/chopped
1 c. celery sliced/chopped

Directions:
Directions:
In a large, deep pot, combine peas, water, ham, onion, chicken bouillon and seasonings. Simmer uncovered for 1½ hours. Stir in carrots and celery, simmer uncovered an additional two hours or until soup reaches desired consistency. Watch, stir frequently, simmer. Add 1-3 cups of water as it simmers towards last hour as liquid seems to simmer away.
