¼ c. butter
½ c. shredded carrots
¼ c. chopped onion
¼ c. flour
salt & pepper to taste
2 c. shredded sharp cheddar cheese
2 ½ c. milk
½ c. beer

Directions:
Directions:
Cook first three ingredients until tender (butter, carrots and onion). Remove from heat. Blend in the flour, add the salt and pepper. Then add the milk all at once.
Return to heat and cook until thick. Add two cups grated sharp cheddar cheese, heat until melted. Stir while cooking to thicken. Stir in the beer. Heat and serve.

If soup seems too thick, use less flour next time. I find this flour proportion works.
